Black tiger shrimps are a real treat and have become an integral part of Michelin-starred cuisine. It is characterized by its firm but tender flesh and has a slightly sweet, nutty aroma. It is also rich in protein and low in calories.

When cooked, the black tiger shrimp takes on a strong red-orange colour.

The open shell protects the shrimp’s meat from direct heat and releases flavours during cooking.

High-quality black tiger shrimps from a responsible source, raised in the traditional manner and in harmony with nature – that is our idea and understanding of sustainable farming. Not far from the world's largest mangrove forest, our black tiger shrimps grow in their natural habitat. Here, in the south-western regions of Bangladesh, Paikgacha and Debhata, we work with around 1,400 small farmers to turn our idea into a reality. Due to the low stocking density of one to two shrimps per square meter, the shrimps can cover their food requirements directly from the existing ecosystem. Known as extensive aquaculture, there is no need to add feed or medication.

Defrosting and storage

Remove the desired amount from the bag and briefly remove the protective glaze under cold running water.

Then defrost the prawns in the fridge.

Do not let raw shrimps come into contact with other foods.

Carefully collect and dispose of the dripping juice. Clean dishes and hands carefully. Not suitable for eating raw. Consume only fully cooked.

Do not refreeze after defrosting.

Cooking and eating together

One person's barbecue in summer is another person's raclette in the cold season.
Raclette is a lovely way to cook and eat with friends and family. Preparing and cooking together is what makes a raclette grill so special.
Our Black Tiger Easy Peel shrimps are ideal for this type of preparation. Their shell ensures that the shrimp is cooked gently and gives off additional flavour. It is best to fry the shrimps on the grill plate of the raclette grill with a little oil. The shrimps can be perfectly rounded off with a delicious dip.
For your next raclette evening, we have prepared an aioli recipe that goes very well with our shrimps and is also quick to prepare.

What you need

  • 150 ml mild olive oil
  • 1 egg yolk
  • 1 tbsp vinegar
  • 1 tsp sugar
  • 1 tsp mustard
  • 2 cloves garlic
  • Salt
  • Pepper

 

Preparation

To prepare the aioli, all the ingredients must have the same temperature. Therefore, take the egg out of the fridge early before preparing it. First, chop the garlic. Now put all the ingredients, except for the olive oil, into a bowl and puree the ingredients with a hand blender. When pureeing, gradually add small amounts of olive oil until you have a creamy, firm mixture. Finally, season the dip with salt and pepper to taste. Leave the aioli dip to infuse so that it can develop its full flavour.

Now you are ready and your raclette evening can begin.
